Healing Harvest Smoothie

Makes two servings.

 

Start your morning with this superfood smoothie.

 

Ingredients:

1 cup organic butternut squash or pumpkin puree*

½ cup almond or hemp milk

¼ cup canna-coco milk

¼ cup coconut cream (pictured)**

2 tablespoons honey

2 tablespoons almond butter

2 teaspoons cinnamon

¼ teaspoon nutmeg, freshly grated if possible

1 tablespoon fresh ginger, peeled and finely chopped

2 cups ice

 

Instructions:

*If roasting your own squash or pumpkins, slice in half, scoop out seeds and roast on a lightly oiled baking sheet for 25-30 minutes at 400 degrees. The flesh should pierce easily with a sharp knife. Allow to cool, then scoop out flesh. Refrigerate before using in smoothie.

 

**Trader Joe’s sells a great organic coconut cream. Otherwise, check the liquor aisle where mixers are stocked. Third option: refrigerate a full-fat can of coconut milk for at least an hour. Open and scrape off the solids that have risen to the top – voila, coconut cream!

 

Combine all ingredients in a Vita-Mix. Process on high for one-to-two minutes.

 

This smoothie is quite luscious. If nighttime is your preferred hour to consume cannabis, remove half the ice from smoothie recipe and eat with a spoon for dessert!
